The thinner the tire, the better it is able to cut through snow. A 195 will do a lot better than a 205 in that respect; the 205 will also bring the profile of the tire up, making it larger in diameter and giving it a bit less clearance in the wheel wells.

I run 195/55-16 for my winter boots.
