I notice lots of "runs" going on - which is great and all - but do any Mini clubs up here in NorCal AutoX or track their cars as a club?
I come from the BMW club mentality where there were more total AutoX'es and track days organized than driving country roads as a group. Just wondering if I'll have to stick to BMW clubs for that type of activity!

There have been some track days organized.

That wasn't incredibly helpful... ;)
By whom? When?

Sorry, I don't really recall. They're not that common. I'm fairly sure NorCal MINI has done one or two. Try checking out these sites for some of the local groups.

Redwood Empire Mini Enthusiasts (http://redwoodempiremini.com/)
ESCA - Empire Sports Car Association - Autocross Events for Santa Rosa, Northern California (http://www.empiresportscar.org/index.php) They do autocross but aren't a MINI club.

Check here:
SCCA San Francisco Region Solo2 Events -- Bay Area (http://www.sfrscca.org/solo2/)
Then get some Mini Club members to form a team and hit the course.
