engine overheating

Hi everyone, well my car is a 04 MCS with 40k km on it, Ive always taken very good care of the car and kept it stock for a long time until recently I decided to tune it a little, did a 15% and CAI, both from ALTA, a coilpack and wires, from msd and the NGK plugs (a step colder), It all ran smoothly for about a month and a half, then one day I noticed the temperature rapidly rising, and i mean rapidly, so I turned off the car imidiatly, the gage had already reached over 3/4 of the scale (I know its celsius but dont know the actual numbers), then I turned the key without turning on the engine and saw the temperature very rapidly falling until it got to the halfpoint, so in that moment, because of the speed with which the temp rose and fell , i thought it had to be a sensor or something fooling the gage. Any way i left it cool for a few minutes, then did the 5 minute drive to my house and left it for the day. The next day I took it to the dealership, and they told me that somethimes the thermostat gets stuck and stops the cool water from running through, or that maybe a bubble had formed inside one of the hose stoping the cool water flow, tthen they opned a kind of relieve valve which let off a lot of air, they refiell the refrigerant and sent me on my way. Then a week later, it happened again, the temperature rose to about the same level (not even an sound alarm or something to let ypou know) I did the same, turned off the engine, let it cool, which it did very rapidly and took it to the dealership. Now it was short on refrigerant again, about a full liter short, so I thought maybe there´s a leak, but they checked it this morning and told me they could not find a leak.

I am really worried about causing engine damage if I havent done already, could the pulley be responsabile for the overheating?? by the way I havent mentioned the pulley to the dealer. what else could cause this overheating??
