Help overheating

Wierd issue with the mini - after a 2 hour long and reasonably enthusiastic drive we were just sitting in a layby when steam started coming out of the bonet & a flood of water came out from under the car. Looking under bonet it was not at all clear where all the water came out from.

We waited for AA, who filled it up, and we tried driving enthusiastically again to re-create issue but car was behaving perfectly with temp guage not wavering. Next day we drove back same distance and without issue.

Will take it to a garage, but was hoping someone on here might have an idea what to check for? one thing I have noticed is I have never heard the fan come on in this car - but perhaps its just a quiet one..
