Noisy fan. Temp sensor?

I've had the noisy fan problem that worsened last week resulting in a rapid loss of water and a boiling industrial kettle like sound.

We discovered a leak on the radiator that has since been fixed - This hasn't stopped the noise, the the leak has lessened - (still losing water but we think this is air in the system).

We just replaced the thermostat and now the water isn't boiling and bubbling as it was previously, but the fan still comes on straight away from a cold start with the temp gauge showing half way - The fans stayed on when turning the car off up until we changed the thermostat.

The car is definitely not overheating now, but the fans still persist. Does this sound like a definite faulty coolant sensor or is there something else it could be?

Any ideas as to what the range is on the temperature sensor? Our heated range is 1.95 and cold is 8.44
