How have Garmin done this...

I've been trying to find a good place to locate my sat nav in the MINI but can't see how this one has been attached to the dash? Do Garmins come with different mounts to TomToms etc?

That's MINI's own mount for the Garmini Nuvi 360 or 660 units.

Only works with the Nuvi. Order directly from your dealer or other MINI parts distributer. It attaches to the back of the tac and charges the Nuvi when it's hooked up and car is running. A very trick setup for those that didn't want to spend a couple grand for the Nav Package.
