Quickly Cooling Issue

My mates JCW spat it's water out today. I pressure tested the system as the expansion tanks tend to crack. It held the pressure for over half hour, cold and warm. Tried to bleed the system then and removed the bleed screw to find there is no water in the hose!!!

Am I right in thinking to change the thermostat first to see if that's stuck closed?
