I'd like to replace the brake handle cover but I'm not sure how to remove it. Any ideas?

You mean the soft (p)leather bit, or the whole plastic piece..?
The leather gaiter unclips from the plastic bit. There's a shaped frame at the bottom that matches the contour of the center plastic bit and has a few clips around it. I think you can lever down the side with a flat screwdriver or a credit card to get it out. If you're wanting to replace the whole plastic bit, you have to start here anyway to get to the screws that hold it down.

Hope that helps. For more info, try searching in the FAQ about removing interior trim. I'm sure there's instructions with pics in there somewhere.
