Apple Cooper Mini one thermostat problem URGENT

My heaters stopped working unless the engine reves were raised, tempreture gage was normal.
My hubby checked under the bonnet when we got home to find the water bubbling and the fans started when engine turned off.
Hubby has now stripped the thermostat and housing but my question is as I only purchased the car a few months ago and they said the thermostat had been changed, do I just change the thermostat again or the thermostat and the yellow seal or the whole housing unit with thermostat and seal to be safe.

Thanks Jo x

Thermostats are normally very reliable but they can fail at any time.
You ought to renew the stat if its faulty and the seal, the housing if its corroded or damaged to the point it might affect the sealing.
Of course the hardest part of the job on a MINI is making sure all the air is bled out of the system as this can cause overheating if present as it interferes with the coolant flow around the system.

There is a chance your problem is related to low cooling fluid. I once had a car that did the same thing. I would stop at a traffic light and all I would get out of the heater would be cool air. I had a radiator leak that I didn't know about. At normal highway speeds, there would be enough water in the system to provide heat.
