The display that shows the remaining mileage until the first service being required, when you start the engine, is now showing just 50 miles.....How accurate is this counter and how long, or many miles, is it safe to exceed this counter without issues etc?.....I may not be able to get my MINI booked in for approx 1 week.........

Also, is the first service just an oil change?......

After hitting zero it will go negative which won't hurt anything but service techs may make a note of it. I just had the first service done on my MC and it was just an oil and filter change (plus n-point inspection of course).
