What do you guys use to clean and polish the dash?

No polish.
Microfiber cloth and some detailing brushes for the cracks.
303 Aerospace Protectant on everything. Best thing I've ever used.

If it's very dirty, like door handles, then I use mild soap and water.

Thanks guys for the responses. I very much appreciate the information. Now if it ever stops raining up here in NY, I will spend a day washing my MINI inside and out!!
