Just placed my deposit for the above but tortured over seat colour the recommended options look dull. I am tempted by Tartan Red/ Black Panther or Orange Sunrise/ Dark Blue anyone already down this learning curve!?

Agree the options for hyper Blue sucks big time. I would have gone with a leather package. Now I'm going with Black leatherette. For two reasons.
I have had their leather before and not a fan of their loose leather seats. It looks funky after a year or two.
I'm getting a Cabrio and even if I didn't the Cloth option is not for me, I know after some time I would have to be shampooing the seats. It is just me, I have had no luck with cloth seats. So, this is my next best option instead of leather or cloth.
Boring black leatherette,. It resembles leather a little And it won't get soaked if I have my cabrio roof off.
As to your choices I vote for: Tartan Red/ Black Panther

Orange Sunrise ONLY works on a Hot Orange with Blue Roof car - I have seen pics of it on other colours and it just does not work as it brings in more colours and makes the car look too fussy (as though you have just specc'ed the car to be as over the top as possible) and I am sure your after a classy look.

If I was in the market for a MSCS I would be getting a Hyper Blue/Black and then I would tone all the interior with that (hyper blue dash/black seating)
