G'day!

I'm trying to decide between the blue or black convertible top. Just wondering
if the colour would at all affect the interior temperature of the car when parked
outside in the sun. Would the blue top (being a lighter shade) reflect heat
better than the black top, therefore keeping the interior cooler?

No.

As far as reflection of light goes they would be similar. As for heat radiance they would be similar also. As for heat transfer they would be similar.

Conclusion - little difference.

I would have thought (correct me if I'm wrong) that in Canada the sun would be generally low in the sky therefore your windows would be the problem. Try a sun visor whilst parked or wrap it in tin foil?
