What off set/tyre size?

As title says for a 16x7 wheel, thanks... It'll be for my 05 MCS R53.

For the tyre size I was thinking either 195/45/16 or 205/40/16? Good/bad?

Wheels offset should be between 42-50 .

The 2 tyre sizes you mention are too small . The sizes should be either 195/55-16 or 205/50-16 . I would favour the 205/50 myself .

That's correct , 205/45-16 tyres are to small as well. The correct wheel and tyre diameter should work out at 24". The 205/50-16 tyre size works out at 24.07", so pretty much spot on. The diameter of 205/45-16 is 23.26", which falls outside the + or - 2.5% range for speedo accuracy.
