Yes I have,on my last mini the calipers got rusty so on my new mini I painted them silver so that they just look like new all the time,I just used Hammerite paint and I have given the brakes a good roasting on more than one occasion and they are fine,so no need for expensive caliper paint

is it as easy as just taking the wheels off & brushing the castings or do you need to strip the brakes down?

Its as easy as that, just take your wheel off give the caliper a brush with a wire brush to get all excese dirt off and aply your caliper paint with a small brush, but you have to give the paint a few hours to dry with out driving anywhere.

I just mask/spray primer & paint mine silver with standard aerosols to stop them going cruddy over time - takes a while and is a bit of a fiddle - but as with all jobs the more time you take the better they look.
Have done this with several cars now - never had any long term paint problems

Couple things to consider:

1. Use brake cleaner thoroughly on the calipers before painting. You want to try to get the surface as contaminant free as possible.

2. If you plan on ever doing auto-x or race track driving with your car, you must use either a high-temp paint (like engine paint), paint made for brake calipers, or have the calipers professionally powder-coated. The extreme high heat that you can build up on calipers under these conditions can easily burn normal paint.

Can you show us a pic? Would like to see how it looks with the disc section painted...

TIA
