Will this profile fit on my stock 16" rims? How will it look? Thinking of it for the increase in traction due to the wider profile of the tyre.

It'll work fine. I'm running 215-50 16s with no issues.
You 205 will be shorter than stock so they will throw off the speedo a little.

So what's the best tyre profile to get for max grip, but without throwing my speedo off?

According to the FAQs a wheel and tire package "should have an overall diameter that is within ±3% of the factory specification".

If you read the FAQs you'll see that the 215/50-16 size is closest to stock, but there are far more tire choices in 205/50-16 and the shorter overall diameter of this size will provide better acceleration.

FAQ: What should be considered in choosing a wheel and tire package?

The FAQ says:-

"Assuming 24.00" (609.6mm) as the factory specification for overall diameter,"

so 205/50/16 (611.4mm) is closer than 215/50/16 (621.4mm) but both are within 3%. 195/55/16 are (620.9mm)
